es ist wohl richtig, dass die sog. Glutensensitivität und ihre Therapieansätze nicht ganz unumstritten sind. In unserem Fall handelt es sich aber eindeutig um eine Zöliakie, und der von dir verlinkte Artikel stellt ja auch eingangs den einzigen wirklick wirksamen Therapieansatz fest:
